This recipe by reader Alex Straftis is so refreshing and invigorating, it’s worth sharing. Simply add ice and he’s created a new drink with all the same health benefits as regular Primal egg coffee.

 

You can switch up the spices (Alex also adds Hungarian paprika) but this blend adds a nice hint of flavor without taking away from the coffee.

 

8 to 12 ounces per serving

 

20 minutes in the kitchen

 

The ingredients are:

 

You will need double the amount of ground coffee for 5 ounces of water (150 ml).

 

Whole pastured eggs, 3

 

A teaspoon of raw honey (5 ml)

 

Vanilla extract (1.25 ml): 1/4 teaspoon

 

Salt (1.25 ml) 1/4 teaspoon

 

(1.25 ml) 1/4 teaspoon cinnamon

 

Cardamom (a pinch) 1/8 teaspoon

 

An eighth of a teaspoon of turmeric (a pinch)

 

A pinch of cream of tartar (an eighth teaspoon)

 

Coconut milk (60 ml) (2 ounces)

 

A large handful of ice (about 1 1/2 cups)

 

When blending with ice, the coffee is brewed at double strength so the flavor is not diluted.

 

The use of cream of tartar is optional. It helps stabilize the egg whites and makes the drink frothier.

 

Follow these instructions:

 

After the coffee has cooled slightly, whisk in the eggs and allow to cool in the freezer for 10 minutes.

 

In a blender, blend honey, vanilla, salt, cinnamon, cardamom, turmeric, cream of tartar, coconut milk, and ice while the coffee chills.

 

Break the ice cubes into small pieces by blending briefly.

 

Blend again for 30 seconds or so until the ice is slushy and the top is frothy.
